Easter Carrot Cupcakes

To celebrate this festive day…I thought of carrot cupcakes. Then I thought of bunny’s, ‘BAMM’, the ultimate combination!fullsizeoutput_b9d


50 g Butter
120 g Suger
2 Pinches Salt
2 Eggs
1 dl Milk
200 g Carrots, finely grated
150 g Grind almonds
100 g Flour
2.5 Tea spoon Baking powder
1 Pinch Cinnamon


-Stir the butter in a bowl.
-Stir the sugar salt and eggs, stirring until the mass is brighter.
-Mix milk and the grated carrots.
-Mix the almonds, the flour, the baking powder and the cinnamon.
-Place the mixture into the cupcake tins.

Baking: approx. 25 min. In the middle of the 180 degree oven. Remove the muffins from the metal plate, cool on a grate.

The bunny decorations:

You will need:

-White Marzipan
-Pink/red food coloring
-Sugar water (mix icing sugar with a bit of water)
-Coconut shavings
-Green buttercream frosting


-Make a ball for the bunny base.

-Then make 2 smaller ovals for the paws.

-Make a small batch of pink marzipan and create 2 smaller ovals.

-Place the pink ovals onto the paws, and use the toothpick to engrave paw outlines.

-Make a smaller ball and roll it into the sugar water, then into the count shavings.

-Assemble everything together by using the sugar water as a glue to stick the parts onto each other.

-Now grab your cupcake, and to create the grass use a tip that either has lot’s of holes, or use something like me, which was a small flat star shaped tip.

-Pipe your cupcake while going in circles from the outside towards the middle.

-All that’s left to do is to place your bunny onto the grass.
